Spiced Pecans

Spiced Pecans

This recipe was adapted from one I found online that called for 1/2 teaspoon ground cloves- I don't care for cloves so I omitted them and added cayenne pepper which I find interesting with the sugar)

1 egg white, lightly beaten

1 Tbsp water

3 cups pecan halves

1/2 cup white sugar

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Red cayenne pepper to taste (I use about 3 large dashes and the pecans are only mildly hot- you can add more if your guests like some heat)

Preheat oven to 350 degrees.  Line a baking sheet with aluminum foil. In a large bowl, beat the egg white with the water.  Stir in the pecans and mix until well moistened.  In a small bowl, mix together all other ingredients.  Pour over moistened nuts and spread nuts on baking sheet.  Bake for 25 minutes, stirring at least 3 times. Watch closely after 20 minutes as these can get a burned taste if overcooked.
