Herbed Goat Cheese Spread

I found this recipe on Better Homes and Gardens website and adapted it a little.

6 oz goat cheese

3 tablespoons cream (I used half and half, but you could use either light or whipping cream)

1/4 cup snipped fresh herbs (the recipe called for any combination of oregano, thyme, rosemary, dill and/or tarragon)  I also think sage and Italian parsley would be great and think about making this with feta instead of goat cheese and using oregano and mint

1 small shallot, minced (you could also get the mild onion taste from chives)

zest of one lemon

1 clove garlic, minced

Sea salt and freshly ground pepper

Toasted baguette slices or crackers (I like the mini toasts that are sold in the deli section at our local Super Fresh)

In a medium bowl, crumble goat cheese. With a fork or whisk, blend in cream until smooth.  Stir in herbs, shallot, lemon zest and garlic.  Season to taste with sea salt and pepper.  Serve on toasted baguette slices or other hearty crackers.
