Fourth Friday of the month, we're at the Milton Farmers Market from 3 to 6 with 5 wines from all over the world and 3 great craft beers.  Stop by and taste and then receive a coupon good for 20% off any wine or beer tasted that day.



Hot Corn Dip

Here's the recipe for the hot corn dip from last night's tasting.  I found it on the web where it was attributed to Emeril Lagasse.

2 Tbs butter
kernels of corn from 4 ears of fresh white or yellow corn
1/8 tsp freshly ground pepper, 1/2 tsp salt
1 cup finely chopped yellow onion
1/2 cup finely chopped red bell peppers (I used roasted red peppers from a jar)
1/4 cup chopped green onions
1 jalapeno, seeded and minced
2 tsp minced garlic
1/2 cup mayonnaise
4 ounces shredded Monterey or Pepper jack cheese
4 ounces shredded Cheddar cheese
1/4 tsp cayenne (I substituted a few dashes of hot sauce)

Preheat oven to 350 degrees.  Melt 1 Tbs butter in skillet over med-high heat.  Add corn, salt and pepper.  Cook, stirring occasionally, until kernels turn deep golden brown (about 5 minutes).  Transfer to bowl.  Melt remaining Tbs butter and add onions and bell peppers, cook, stirring often, until onions are wilted.  Add green onions, jalapeno and garlic and cook, stirring for 2 minutes.  Add to bowl with corn.  Add 1/2 cup mayo, cayenne pepper or hot sauce, half of the Monterey jack and half of the cheddar and mix well.  Pour into an 8 inch baking pan and sprinkle the remaining cheese on top.  Bake until bubbly and brown, about 10 to 12 minutes.  Serve with tortilla chips.

Victory Brewing discontinued their Hop Wallop beer in favor of producing this new beer.  A dangerously delicious recipe featuring often suble but sometimes assertive signatures of American hop varieties.  Look for: Citra: heavy, citrus aroma, fruity flavor; Chinook: grapefruit, resinous pine; Simcoe: dry, piney; and Mosaic, earthy and mildly floral, with notes of sweet citrus and spice.  $9.99 for a 4 pack.
